The heart of the hotel, however, is the winery under the management of Gregor Barth, a renowned graduate engineer in viticulture and oenology. His philosophy: "Really good wine is not anonymous, but bears the character of the winemaker." The wines reflect his personality and are the result of careful cultivation of the vines, which are grown exclusively on steep slopes. The estate's vineyards cover 8 hectares and are primarily known for Riesling and Pinot Noir, although Pinot Gris and Pinot Blanc also play an important role.
The "Obere Heimbach" site deserves special attention, known for its warm, wind-protected conditions, which particularly benefit the Burgundy vines and Auxerrois. Equally impressive is the "Schwalbennest", which has a variety of humus-rich and stony sections where the unique "Riesling Metamorphit" thrives. Last but not least, the "Rehborner Herrenberg" is worth mentioning, an exclusive location that helps the Riesling to achieve exceptional elegance thanks to its barren soils.
